Ingredients

  • 4 chicken thighs
  • 1 tablespoons olive oil
  • salt, to taste
  • black pepper, to taste
  • 1/2 cup soy sauce
  • 1/2 cup brown sugar
  • 2 tablespoons white vinegar
  • 1 teaspoon ground ginger
  • 4 cloves garlic, minced

Directions

Step 1 -Preheat the oven to 375 degrees F.

Step 2 -On a large platter, add the chicken thighs and coat them with the olive oil.

Step 3 -Season the coated chicken thighs with the salt and the black pepper on both sides.

Step 4 -Place the chicken in a cast-iron or oven-proof skillet and transfer the skillet to the oven.

Step 5 -Roast the chicken without turning or moving it until the skin is lightly browned, about 3-5 minutes.

Step 6 -While the chicken is roasting, in a medium bowl, add the soy sauce, the brown sugar, the white vinegar, the ground ginger, and the garlic and stir to combine.

Step 7 -Transfer the chicken thighs from the skillet to a large plate and drain any drippings from the skillet.

Step 8 -Transfer the chicken thighs back to the drained skillet, skin-side up.

Step 9 -Pour the soy sauce mixture over the chicken thighs.

Step 10 -Transfer the chicken back to the oven and roast, basting occasionally, until the sauce has reduced and thickened and the chicken thighs are cooked through, reading 165 degrees F when tested with a meat thermometer in its thickest part, about 25 minutes.

Step 11 -Plate and serve.
