You've heard of shakshuka before, but Spicy Eggs are a distinctly Tex-Mex rendition of the trendy dish. The eggs are baked in spicy salsa verde and then sprinkled with salty cotija cheese and fragrant cilantro! The eggs are perfectly runny and savory, just begging to be dipped with tortillas and maybe even fresh radishes! Spicy Eggs will bring a little heat to your breakfast!
Ingredients
- For the eggs:
- 1 cup prepared salsa verde
- 4 large eggs
- kosher salt, to taste
- freshly cracked black pepper, to taste
- Optional, for serving:
- 1/4 cup cotija cheese, crumbled
- 1/4 cup fresh cilantro leaves
- 2 radishes, thinly sliced
- tortillas, to taste, warmed
- lime wedges, to taste
Directions
Step 1 -Preheat the oven to 400 degrees F.
Step 2 -Coat a 10-inch ovenproof skillet with cooking spray.
Step 3 -Add the salsa verde to the skillet and spread it out evenly.
Step 4 -Crack the eggs evenly over the salsa verde layer.
Step 5 -Season the eggs with the salt and the black pepper.
Step 6 -Bake until the eggs are no longer transparent but the yolks are still runny, about 12-13 minutes.
Step 7 -Sprinkle the eggs with the cotija, the cilantro, and the radishes.
Step 8 -Serve with the tortillas and the lime wedges.
