Ingredients

  • For the waffles:
  • 2 cups all-purpose flour, spooned and leveled
  • 1 1/2 teaspoons baking powder
  • 1 teaspoon baking soda
  • 2 1/2 teaspoons ground ginger
  • 1 1/2 teaspoons ground cinnamon
  • 1/2 teaspoon ground allspice
  • 1/4 teaspoon ground cloves
  • 1/4 teaspoon ground nutmeg
  • 1/2 teaspoon salt
  • 1/2 cup unsalted butter, melted and slightly cooled
  • 1/4 cup light or dark brown sugar
  • 1/4 cup unsulphured or dark molasses
  • 3 large eggs
  • 1 2/3 cups buttermilk
  • For the pecan maple syrup:
  • 3/4 cup pecan halves
  • 1 1/2 cups pure maple syrup
  • cranberries, to taste

Directions

Step 1 -Preheat a waffle maker on medium-high heat.

Step 2 -Preheat the oven to 200 degrees F.

Step 3 -Place a wire rack on a baking sheet.

Step 4 -In a large bowl, add the flour, the baking powder, the baking soda, the ginger, the cinnamon, the allspice, the cloves, the nutmeg, and the salt and whisk to combine.

Step 5 -In a separate large bowl, add the melted butter, the brown sugar, and the molasses and whisk to combine.

Step 6 -Add the eggs to the butter mixture and whisk to combine.

Step 7 -Add the buttermilk to the egg mixture and whisk until combined.

Step 8 -Pour the buttermilk mixture into the dry ingredients mixture and whisk gently until combined into a batter. Do not overmix.

Step 9 -Coat the preheated waffle maker with nonstick spray.

Step 10 -Pour about 1/3 cup of the batter into the well of the waffle maker and close the lid.

Step 11 -Cook the waffle until crisp, about 4-5 minutes.

Step 12 -Transfer the cooked waffles to the prepared wire rack and keep them warm in the oven while making the rest of the waffles.

Step 13 -Repeat the cooking process until all of the batter is used.

Step 14 -In a saucepan or skillet over medium-low heat, add the pecans and toast until golden and subtly fragrant, about 4-5 minutes.

Step 15 -Reduce the heat to low.

Step 16 -Add the maple syrup to the pecans and let it sit just until warmed through.

Step 17 -Serve the waffles topped with the warm pecan maple syrup and the cranberries.
