Momma's Greek Potatoes are undeniably delicious! The brightness and sharpness of the lemon actually brings out a new dimension of flavor from the homespun rustic flavor of the potatoes, making them truly delectable. A few sprinkles of herbs and a braise in chicken broth adds fragrance and savory flavor, too! Momma's Greek Potatoes are just how Momma used to make them (assuming your mother made the best potatoes)!
Ingredients
- 1 1/2 cups chicken broth
- 1/2 cup olive oil
- 1/4 cup lemon juice
- 3 cloves garlic, minced
- 1 tablespoon dried oregano
- 1 teaspoon salt
- ground black pepper, to taste
- 2 1/2 pounds baking potatoes, peeled, cut into wedges
- paprika, optional, to taste, for garnish
- parsley leaves, optional, to taste, for garnish
Directions
Step 1 -Preheat the oven to 350 degrees F.
Step 2 -In a 9x13-inch baking dish, add the chicken broth, the oil, the lemon juice, the garlic, the oregano, the salt, and the black pepper and stir to combine.
Step 3 -Add the potato wedges to the broth mixture and stir to coat.
Step 4 -Bake the seasoned potato wedges until the potatoes are fork-tender, about 1 hour 30 minutes-1 hour 45 minutes.
Step 5 -Transfer the baking dish to a wire rack and let the seasoned potato wedges rest, about 10 minutes.
Step 6 -Serve the seasoned potato wedges garnished with the paprika and the parsley.
