There is no salad out there more refreshing than this Greek Fattoush Salad. Whether on its native shores of the Mediterranean or in your own kitchen, it's impossible not to love juicy cucumbers and tomatoes, with bright bell peppers and spicy radishes in a simple olive oil-lemon dressing. Homemade pita chips make some truly excellent croutons, too! Greek Fattoush Salad makes salad the part of the meal you're the most excited to eat! Amazing!
Ingredients
- 1/4 cup olive oil, plus more, to taste
- 2 pita bread rounds, broken into small pieces
- 1 English cucumber, chopped
- 1 green bell pepper, chopped
- 3 medium tomatoes, chopped small
- 6 green onions, chopped
- 1/2 cup radishes, sliced
- 1/3 cup fresh parsley, chopped
- 2 tablespoons mint, finely chopped
- 1/4 cup lemon juice
- 1/4 teaspoon salt
- 1/2 teaspoon black pepper
- 1 tablespoon ground sumac
Directions
Step 1 -In a medium skillet over medium heat, add the extra olive oil.
Step 2 -Add the pita bread pieces and fry them until golden-brown and crispy, about 2-4 minutes.
Step 3 -Transfer the pita bread pieces to a paper-towel-lined plate to drain.
Step 4 -In a large bowl, add the cucumbers, the bell peppers, the tomatoes, the onions, the radishes, the parsley, and the mint and toss lightly to combine.
Step 5 -In a small bowl, add the remaining 1/4 cup of the olive oil, the lemon juice, the salt, the pepper, and the sumac and whisk to combine.
Step 6 -Add the dressing and the pita bread pieces to the salad mixture and toss to combine.
Step 7 -Serve.
