Ingredients

  • 3 tablespoons butter, melted
  • 1 medium lemon, zested and juiced
  • 1 teaspoon salt, divided, plus more, to taste
  • 1 teaspoon paprika
  • 1 teaspoon garlic powder
  • 1 teaspoon onion powder
  • 1/4 teaspoon freshly ground black pepper, plus more, to taste
  • 2 (1-pound) cod fish fillets, each cut into 2 (6-inch-long) fillets, patted dry
  • 3 tablespoons olive oil
  • basil, optional, to taste, freshly chopped, for garnish
  • lemon wheels, to taste, for garnish

Directions

Step 1 -In a small bowl, add the melted butter, the lemon zest, the lemon juice, and 1/2 teaspoon of the salt and stir to combine.

Step 2 -Taste the lemon-butter mixture and season with the extra salt, as needed. Stir to combine.

Step 3 -In a medium bowl, add the remaining 1/2 teaspoon of the salt, the paprika, the garlic powder, the onion powder, and 1/4 teaspoon of the black pepper and stir to combine.

Step 4 -Evenly press the spice mixture onto all sides of each of the fish fillets.

Step 5 -In a large, heavy-bottomed pan over medium-high heat, add the oil and heat until it is hot and sizzling.

Step 6 -Add 2 of the seasoned fillets to the hot oil and cook on each side, drizzling 1/4 of the lemon-butter mixture over them halfway through, until they reach an internal temperature of 145 degrees F, become opaque, feel slightly firm in the center, and are browned, about 2-3 minutes per side.

Step 7 -Transfer the cooked fillets to a plate and cover to keep them warm. Repeat the cooking process with the remaining seasoned fillets, drizzling 1/3 of the remaining lemon-butter mixture over the fillets as they cook.

Step 8 -Season the cooked fillets with the extra salt and the extra black pepper.

Step 9 -Plate the fish fillets drizzled with the remaining lemon-butter mixture.

Step 10 -Serve the fish fillets garnished with the basil and the lemon wheels.
