Ingredients
- 1 bunch asparagus, trimmed
- 3 large carrots, sliced into long, thin stalks similar to the size of the asparagus
- 1 tablespoon olive oil
- salt, to taste
- freshly ground black pepper, to taste
- 1/2 cup goat cheese crumbles
- 2 teaspoons lemon zest
Directions
Step 1 -Preheat the oven to 400 degrees F.
Step 2 -Line a baking sheet with parchment paper.
Step 3 -Arrange the asparagus stalks and the carrot stalks in an even layer on the prepared baking sheet.
Step 4 -Drizzle the vegetable mixture with the olive oil and toss until lightly coated.
Step 5 -Season the vegetable mixture with the salt and the pepper.
Step 6 -Roast the vegetable mixture until it is tender and slightly browned, about 20-25 minutes.
Step 7 -Sprinkle the vegetable mixture with the goat cheese and the lemon zest.
Step 8 -Serve.
