Ingredients
- 12 ounces penne pasta
- 2 tablespoons olive oil
- 1 large shallot, minced
- 3 cloves garlic, minced
- 1 (15-ounce) can diced tomatoes
- 2/3 cup tomato sauce
- 1 teaspoon dried oregano
- 1 teaspoon dried basil
- 1/2 teaspoon chili flakes
- 1 teaspoon salt
- 1/2 teaspoon pepper
- 1 cup heavy cream
- 1/2 cup parmesan cheese, grated or shredded, plus more, to taste, for serving
- 1/4 cup mozzarella cheese
- fresh basil leaves, optional, to taste, for serving
Directions
Step 1 -In a large pot of salted, boiling water, add the pasta and cook it to al dente, according to the package directions.
Step 2 -Drain the pasta and set it aside.
Step 3 -In a large skillet over medium-high heat, add the olive oil.
Step 4 -Add the shallots to the hot oil and cook, while stirring, until tender, about 5 minutes.
Step 5 -Add the garlic to the shallots and cook, while stirring, until fragrant, about 1-2 minutes.
Step 6 -Add the diced tomatoes and their juices, the tomato sauce, the dried oregano, the dried basil, the chili flakes, the salt, and the pepper to the shallot mixture and stir to combine.
Step 7 -Lower the heat to medium and bring the sauce mixture to a simmer.
Step 8 -Add the heavy cream, 1/2 cup of the parmesan, and the mozzarella to the sauce mixture and stir to combine.
Step 9 -Bring the sauce to a gentle simmer and cook, while stirring constantly, until the sauce thickens slightly, about 3-5 minutes.
Step 10 -Add the pasta to the sauce and stir until the noodles are coated well.
Step 11 -Serve topped with the fresh basil leaves and the extra parmesan.
