Ingredients
- For the chicken:
- 1 cup orange juice
- 1/4 cup rice vinegar
- 1/4 cup brown sugar
- 2 tablespoons soy sauce
- 2 tablespoons onion, minced
- 1 orange, zested
- 1 tablespoon sriracha
- 2 tablespoons cornstarch
- 3 cloves garlic, grated
- 1 (1-inch) knob ginger, grated
- 2 pounds chicken breasts or thighs, boneless and skinless, cut into bite-sized pieces
- Optional, for serving:
- white rice, to taste, cooked and hot
- orange zest, to taste
- green onions, to taste, chopped
- orange slices, to taste
Directions
Step 1 -In a large bowl, add the orange juice, the rice vinegar, the brown sugar, the soy sauce, the onions, the zest of 1 orange, the sriracha, the cornstarch, the garlic, and the ginger and whisk to combine.
Step 2 -Pour the orange juice mixture into a slow cooker.
Step 3 -Add the chicken pieces to the slow cooker and stir to combine.
Step 4 -Cover and cook until the chicken pieces reach an internal temperature of 165 degrees F, about 3-4 hours on high or 6-8 hours on low.
Step 5 -On serving plates, evenly add the hot rice.
Step 6 -Evenly add the orange chicken on top of the white rice.
Step 7 -Serve garnished with the extra orange zest, the green onions, and the orange slices.
