Christmas in the country sounds just so romantic, doesn't it? The sweeping, snow-covered plains. The white on the pine trees. It's beautiful... but not quite as beautiful as this Country Christmas Morning Skillet! Runny, savory eggs are baked right into a bed of country-style home fries! Oh, and everything is blanketed with cheese, because... obviously. This is Country Christmas Morning Skillet after all. It needs cheese! Your Christmas morning will really be merry and bright!
Ingredients
- 3 tablespoons butter
- 1 1/2 pounds red potatoes, chopped
- 1/4 cup fresh parsley, minced
- 2 teaspoons garlic, minced
- 1 1/2 teaspoons garlic salt with parsley flakes
- 1/8 teaspoon black pepper
- 8 large eggs
- 3/4 cup extra-sharp cheddar cheese, shredded
Directions
Step 1 -Preheat the oven to 400 degrees F.
Step 2 -In a 10-inch ovenproof skillet over medium heat, melt the butter.
Step 3 -Add the potatoes to the melted butter and cook, while stirring, until tender, about 6-8 minutes.
Step 4 -Add the parsley, the garlic, the garlic salt, and the black pepper to the potatoes and stir to combine.
Step 5 -Using the back of a spoon, make four wells in the seasoned potatoes.
Step 6 -Add 2 of the eggs to each of the wells in the potato mixture. Try to keep the yolks intact.
Step 7 -Bake until the eggs are just set, about 10-12 minutes.
Step 8 -Sprinkle the egg mixture with the cheese and bake until melted, about 1-2 minutes.
Step 9 -Serve immediately.
