These hearty, sweet, and nutrient-packed oats are soaked in creamy banana, tangy cottage cheese, and floral vanilla and then topped with protein-packed chia seeds. Topped with pretty much anything you can think of, Banana Cream Pie Oats are the morning dessert you can eat with no guilt!

Ingredients

  • For the oats:
  • 1 ripe banana, peeled
  • 1/2 cup low-fat cottage cheese, preferably whipped
  • 1/4 cup unsweetened almond milk
  • 1/4 cup old-fashioned oats
  • 1 tablespoon chia seeds
  • 1 teaspoon pure vanilla extract
  • Optional, for topping:
  • bananas, to taste, sliced
  • walnuts, to taste, toasted
  • cinnamon, to taste

Directions

Step 1 -In a small, microwave-safe bowl or Mason jar, add 1 of the ripe bananas and microwave until it is softened, about 30 seconds.

Step 2 -Add the cottage cheese to the banana and mash until well-combined.

Step 3 -Add the almond milk, the oats, the chia seeds, and the vanilla to the banana mixture and stir well to combine.

Step 4 -Cover the bowl and refrigerate it until the oats are tender and the liquid is almost totally absorbed, at least 6 hours and up to overnight.

Step 5 -Serve topped with the extra banana slices, the walnuts, and the cinnamon.
