Ingredients

  • For the orange pork:
  • 1/2 cup coconut aminos
  • 1 teaspoon toasted sesame oil
  • 2 tablespoons rice vinegar
  • 1 (1-inch) knob fresh ginger, peeled and finely grated
  • 1/2 orange, zested
  • 1/2 cup fresh orange juice
  • 2 tablespoons sriracha sauce
  • 1/3 cup honey
  • 1 (1-1.5-pound) pork tenderloin, cut into 1/2-inch-thick cubes
  • 1 teaspoon kosher salt
  • 1/2 teaspoon black pepper
  • 4 tablespoons avocado oil, divided
  • 1 1/2 tablespoons tapioca flour
  • 1 cup white onion, diced
  • 2 cloves garlic, minced
  • For serving:
  • sesame seeds, to taste
  • white rice, to taste, cooked and warm
  • broccoli florets, to taste, steamed and warm

Directions

Step 1 -In a small bowl, add the coconut aminos, the toasted sesame oil, the rice vinegar, the ginger, the orange zest, the orange juice, the sriracha sauce, and the honey and whisk to combine. Set the sauce mixture aside.

Step 2 -In a large bowl, add the pork cubes, the salt, the pepper, 1 tablespoon of the avocado oil, and the tapioca flour and toss to coat.

Step 3 -In a nonstick skillet over medium-high heat, add the remaining avocado oil.

Step 4 -Add the seasoned pork cubes in a single layer to the heated oil and cook, undisturbed, until they are crisp and browned on one side, about 3 minutes.

Step 5 -Flip the pork cubes and cook, undisturbed, until they are browned on the reverse side, about 3 minutes. It is okay for the pork to not be fully cooked.

Step 6 -Use a slotted spoon to transfer the cooked pork cubes to a plate and cover to keep them warm.

Step 7 -In the same skillet, add the onions and the garlic and cook, while stirring, until the onions are tender, about 3 minutes.

Step 8 -Pour the sauce mixture over the onion mixture and toss until it is well-combined.

Step 9 -Bring the sauce to a simmer and cook, while stirring, until it reduces by half and starts to thicken, about 4 minutes.

Step 10 -Add the pork cubes and their juices from the plate to the sauce and cook until the meat is well-coated and cooked through to at least 145 degrees F, about 2-3 minutes.

Step 11 -Sprinkle the pork stir-fry with the sesame seeds.

Step 12 -Serve the stir-fry over the rice and with the broccoli.
