Ingredients

  • 1 (4-pound) round roast
  • 1/4 cup extra-virgin olive oil
  • 3 cloves garlic, minced
  • 1 tablespoon fresh rosemary, chopped
  • 1 tablespoon fresh thyme leaves, chopped
  • 2 teaspoons kosher salt
  • 1 teaspoon ground black pepper

Directions

Step 1 -Let the roast sit at room temperature for about 1 hour.

Step 2 -Preheat the oven to 450 degrees F.

Step 3 -In a small bowl, combine the olive oil, the garlic, the rosemary, the thyme, the salt, and the pepper.

Step 4 -Rub the seasoning mixture over all the sides of the roast.

Step 5 -Place the roast in a roasting pan fitted with a roasting rack.

Step 6 -Roast the beef for 15 minutes, then reduce the heat to 325 degrees F and roast until medium reading 140 degrees F on a thermometer, about 1 hour 45 minutes.

Step 7 -Remove the roast from the oven and let it rest for about 15-30 minutes.

Step 8 -Serve warm!
