Ingredients

  • 1 pound ground beef
  • 1 (46-ounce) can tomato juice
  • 2 potatoes, peeled and diced
  • 2 carrots, chopped
  • 1 onion, chopped
  • 1 (14.5-ounce) can green beans
  • 1 (14-ounce) can whole kernel corn
  • ground ginger, to taste
  • salt, to taste
  • black pepper, to taste

Directions

Step 1 -In a saucepan over medium heat, add the ground beef and cook, while crumbling, until it is no longer pink, about 5-7 minutes.

Step 2 -Drain the excess fat from the saucepan.

Step 3 -Add the tomato juice to the ground beef and stir to combine.

Step 4 -Add the potatoes, the carrots, and the onions to the beef mixture and stir to combine.

Step 5 -Add the green beans and their juices and the corn and their juices to the beef mixture and stir to combine.

Step 6 -Season the soup mixture with the ginger, the salt, and the black pepper.

Step 7 -Reduce the heat to low and let the soup mixture simmer until thickened and the flavors meld together, about 1 hour.

Step 8 -Serve.
