You'll be doing more than rolling over for this dinner; you'll be doing flips! Rollover Casserole is a meaty and filling dish that is a breeze to assemble and a joy to eat. Succulent bits of pork mingle with tender egg noodles in a tangy, creamy mushroom sauce with melty sharp cheese mixed right in! Serve Rollover Casserole with a side of cornbread and your taste buds will be rolling over for more!
Ingredients
- 1 (12-ounce) package egg noodles, cooked
- 3 cups pork tenderloin, cooked and diced
- 2 (10.5-ounce) cans cream of mushroom soup
- 1 cup sour cream
- 2 cups frozen peas and carrots
- 1 cup cheddar cheese, shredded
- 1/2 teaspoon garlic powder
- 1/2 teaspoon salt
- 1/2 teaspoon pepper
- cornbread, optional, to taste, homemade or store-bought, for serving
Directions
Step 1 -Preheat the oven to 350 degrees F.
Step 2 -Prepare a 9x13-inch baking dish with nonstick cooking spray.
Step 3 -In a large bowl, add the pork, the cream of mushroom soup, the sour cream, the peas and carrots, the cheese, the garlic powder, the salt, and the pepper and stir to combine.
Step 4 -Add the egg noodles to the pork mixture and stir to combine.
Step 5 -Transfer the pork mixture to the prepared baking dish, spreading it out evenly.
Step 6 -Cover the baking dish with foil and bake until it is heated through and bubbly, about 30 minutes.
Step 7 -Serve with the cornbread.
