Ingredients

  • 2 tablespoons olive oil
  • 1 medium onion, diced
  • 2 stalks celery, diced
  • 1 pound ground sausage
  • 1 teaspoon salt
  • freshly ground pepper, to taste
  • 2 tablespoons fresh sage, minced
  • 2 teaspoons fresh rosemary, minced
  • 2 tablespoons fresh flat-leaf parsley, chopped
  • 1 Golden Delicious apple, cored and diced
  • 3/4 cup dried cranberries
  • 2 cups low-sodium chicken stock or turkey stock
  • 6 cups unseasoned bread cubes for stuffing or 1 loaf sourdough, cubed
  • 4 tablespoons butter, melted

Directions

Step 1 -In a large saucepan or skillet, heat the olive oil.

Step 2 -Add the onions and the celery to the hot oil and sauté until they start to soften, about 3-5 minutes.

Step 3 -Add the sausage, the salt, and the pepper to the skillet and cook, breaking up the sausage and stirring, until cooked through, about 5-7 minutes.

Step 4 -Add the sage, the rosemary, and the parsley to the sausage mixture, stirring to combine.

Step 5 -Add the apples and the cranberries to the sausage mixture, stirring to combine.

Step 6 -Place the sausage mixture and the bread cubes into a large slow cooker.

Step 7 -Stir the stock and the melted butter into the bread and sausage mixture.

Step 8 -Cover the slow cooker and cook on low until everything is tender, about 4 hours.

Step 9 -Serve.
