Vegetables deserve better. They are often forgotten or disparaged compared to the main course or beloved starchy sides. But not with these Special Roasted Carrots! These tender, tangy, sweet carrots are oven-roasted and delicately seasoned for the perfect vegetable side that even the most devoted of carnivores will love! Special Roasted Carrots are just special that way!
Ingredients
- 2 pounds carrots, peeled and sliced lengthwise
- 1 tablespoon oil
- salt, to taste
- black pepper, to taste
- 2 tablespoons honey
- 2 tablespoons balsamic vinegar
- 1 clove garlic, grated
- 1/2 teaspoon parsley, chopped, can substitute thyme
Directions
Step 1 -Preheat the oven to 425 degrees F.
Step 2 -On a baking sheet, add the carrots, the oil, the salt, and the black pepper and toss to combine.
Step 3 -Roast the carrots, turning them once halfway through, until they are tender, about 18-20 minutes.
Step 4 -In a small saucepan over medium heat, add the honey and the balsamic vinegar and cook, while stirring, until slightly thickened, about 5 minutes.
Step 5 -Turn off the stovetop heat.
Step 6 -Add the garlic and the parsley to the honey mixture and stir to combine.
Step 7 -Drizzle the honey mixture over the carrots and toss to coat and combine.
Step 8 -Serve.
