Directions

Step 1 -Preheat the oven to 450 degrees F.

Step 2 -On a baking sheet, add the fries and spread them out evenly.

Step 3 -Bake the fries, flipping them once, until crispy and heated through, about 20-25 minutes.

Step 4 -Season the ground beef with the salt and the black pepper.

Step 5 -In a cast-iron skillet over medium heat, melt the extra butter.

Step 6 -Break the ground beef into 6 even portions.

Step 7 -Add the beef portions to the melted butter and use the bottom of a glass or jar to carefully smash them down into the skillet to form thin patties.

Step 8 -Cook the patties, flipping them once, until browned, about 1-2 minutes per side.

Step 9 -In a saucepan over medium heat, melt 2 tablespoons of the remaining butter.

Step 10 -Add the flour to the melted butter and cook, while whisking, until the flour is golden, about 2-3 minutes.

Step 11 -While whisking, slowly stream the milk into the flour mixture and cook, while continuing to whisk and stir, until it thickens into a sauce, about 5 minutes.

Step 12 -Reduce the heat to low.

Step 13 -Add the white cheddar to the sauce, 1 handful at a time, and stir to combine until melted.

Step 14 -Add the salt and the black pepper to the sauce and stir to combine.

Step 15 -Drizzle the fries with about 1/2 of the sauce mixture.

Step 16 -Top the fries with the patties, breaking them up, as desired.

Step 17 -Drizzle the fries and the patties with the remaining sauce.

Step 18 -Bake the burger-fries until everything is warmed through, about 5-10 minutes.

Step 19 -In a bowl, add the mayonnaise, the ketchup, the dill relish, the onions, the honey, the vinegar, and the paprika and whisk to combine.

Step 20 -Serve the burger-fries topped with the Thousand Island dressing, the pickles, and the jalapeños.
