Ingredients
- 2 (1-pound) rib-eye steaks, can substitute New York strip steak or top sirloin steak
- 1 1/2 teaspoons sea salt
- 1 teaspoon black pepper
- 1 teaspoon garlic powder
- 1 teaspoon smoked paprika
- 1 tablespoon extra-virgin olive oil
- 2 tablespoons unsalted butter
- 3 cloves garlic, peeled and halved
- 4 fresh thyme sprigs
Directions
Step 1 -Pat the steaks dry with paper towels.
Step 2 -Generously season the steaks on both sides with the salt, the black pepper, the garlic powder, and the smoked paprika.
Step 3 -Preheat a 10-inch cast-iron skillet over medium-high heat.
Step 4 -Add the olive oil to the hot skillet and swirl it to coat the bottom.
Step 5 -Add the steaks to the hot oil and sear the steaks on one side, undisturbed, until a brown crust forms on the bottom, about 4-5 minutes.
Step 6 -Using tongs, flip the steaks and sear them, undisturbed, until a brown crust forms on the bottom, about 4-5 minutes.
Step 7 -Reduce the heat to medium.
Step 8 -Add the butter, the garlic cloves, and the thyme sprigs beside the steaks in the pan.
Step 9 -Slightly tilt the pan so the melted butter pools and continually spoon it over the steaks until the steaks reach an internal temperature of at least 130 degrees F for medium-rare, about 1-2 minutes.
Step 10 -Transfer the steaks to a cutting board and allow them to rest until they reach an internal temperature of at least 135 degrees F for medium-rare, about 5-10 minutes.
Step 11 -Optionally, slice the steaks against the grain.
Step 12 -Serve.
