Ingredients

  • For the apple cider vinegar dressing:
  • 1 tablespoon maple syrup
  • 2 tablespoons apple cider vinegar
  • 1 tablespoon Dijon mustard
  • 1/8 teaspoon ground ginger
  • 1/8 teaspoon kosher salt
  • 6 tablespoons extra virgin olive oil
  • For the salad:
  • 6 cups mixed greens
  • 1 cup pomegranate seeds
  • 1 shallot, thinly sliced
  • 1 Granny Smith apple, thinly sliced
  • 1/2 cup pecans, toasted or glazed
  • 2 ounces goat cheese, optional, crumbled

Directions

Step 1 -In a medium bowl, whisk the maple syrup, the apple cider vinegar, the Dijon mustard, the ground ginger, and the salt together.

Step 2 -Slowly whisk in the olive oil, 1 tablespoon at a time, until an emulsion forms and the dressing is fully combined. Set it aside.

Step 3 -Place the mixed greens in a salad bowl or on a serving platter.

Step 4 -Top with the pomegranate seeds, the shallots, the apples, the pecans, and the goat cheese.

Step 5 -Drizzle on the apple cider vinegar dressing and toss to coat evenly.

Step 6 -Serve.
