The Sugar & Spice Margarita delivers both sweet and spicy summer goodness with every sip! It's made with a homemade jalapeño syrup, which will definitely wake your mouth up and get everyone feeling happy! And when that heat gets mixed with a tequila-pineapple mixture, a truly refreshing beverage is born! Why not enjoy the summer to the fullest with this Sugar & Spice Margarita?
Ingredients
- 3/4 cup sugar, divided
- 1/2 cup water
- 1 jalapeño, stems and seeds removed, sliced, plus more, to taste, for garnish
- 1 large fresh pineapple, cubed, plus more, to taste, for garnish
- 3/4 cup tequila
- 1 cup ice
- 1 lime, zested then cut into wedges
Directions
Step 1 -In a small saucepan over high heat, add 1/2 cup of the sugar and the water and bring the mixture to a boil.
Step 2 -Continue to boil, while stirring, until the sugar completely dissolves.
Step 3 -Add the slices from 1 of the jalapeños to the simple syrup and transfer the saucepan from the heat.
Step 4 -Allow the jalapeño syrup to sit, undisturbed, for 15 minutes.
Step 5 -Pour the jalapeño syrup into a bowl through a sieve and discard the solids.
Step 6 -In a blender, add the cubes from 1 of the pineapples, the jalapeño syrup, the tequila, and the ice. Cover and blend on high until smooth.
Step 7 -On a small plate, add the remaining sugar and the lime zest and stir to combine.
Step 8 -Rub the rims of the serving glasses with the lime wedges.
Step 9 -Dip the rims in the lime-sugar mixture to coat.
Step 10 -Evenly fill the glasses with the margarita mixture.
Step 11 -Serve garnished with the extra jalapeño slices and the extra cubed pineapples.
