You might expect summer slushies to be candy-sweet but Pucker-Up Slushies are all about defying expectations! These delightfully pink and tart slushies are packed with distinct rhubarb flavor, alongside the more traditional sunny lemon! Pucker-Up Slushies also have a little vodka mixed in for a lovely, grown-up buzz! Summer hasn't been this fun since we were kids!
Ingredients
- 3 cups fresh or frozen rhubarb, chopped
- 1 cup water
- 1/3 cup sugar
- 1 cup vodka
- 3/4 cup pink lemonade concentrate, thawed
- 1 (2-liter) bottle lemon-lime soda, chilled
Directions
Step 1 -In a large saucepan over high heat, add the rhubarb, the water, and the sugar and bring the mixture to a boil.
Step 2 -Reduce the heat to medium-low and cover the saucepan.
Step 3 -Simmer the rhubarb mixture until the rhubarb is tender, about 5 minutes.
Step 4 -Allow the rhubarb mixture to cool slightly.
Step 5 -In a blender, add the rhubarb mixture.
Step 6 -Cover the blender and purée the rhubarb mixture until it is smooth.
Step 7 -Transfer the rhubarb mixture to a 1-quart freezer container.
Step 8 -Add the vodka and the lemonade concentrate to the rhubarb mixture and stir to combine.
Step 9 -Cover the container and place the rhubarb mixture in the freezer until it is firm, about 8 hours.
Step 10 -Transfer the rhubarb mixture to a pitcher.
Step 11 -Add the lemon lime-soda to the pitcher.
Step 12 -Serve.
