Ingredients

  • For the dressing:
  • 1/4 cup extra-virgin olive oil
  • 2 tablespoons red wine vinegar
  • 1 teaspoon dried oregano
  • 1/2 teaspoon salt
  • 1/2 teaspoon black pepper
  • For the salad:
  • 1 cucumber, seedless, cut into half rounds
  • 1 pint Campari tomatoes, can substitute cherry or tomatoes-on-the-vine
  • 1 cup Kalamata olives
  • 1/2 cup red onions, sliced
  • 1 (8-ounce) block feta cheese
  • 2 tablespoons capers

Directions

Step 1 -In a medium bowl, add the olive oil, the red wine vinegar, the oregano, the salt, and the black pepper and whisk to combine.

Step 2 -In a large bowl, add the cucumber, the tomatoes, the Kalamata olives, and the red onion and toss to combine.

Step 3 -On a cutting board with a sharp knife, add the feta cheese block and cut it in half diagonally.

Step 4 -Add the feta cheese halves on the top of the salad mixture.

Step 5 -Evenly sprinkle the capers on top of the salad mixture.

Step 6 -Evenly drizzle the dressing over the salad mixture.

Step 7 -Serve.
