Ingredients

  • 3/4 cup mayonnaise
  • 2 tablespoons apple cider vinegar
  • 1 tablespoon Dijon mustard
  • 1 tablespoon pure maple syrup
  • 3/4 teaspoon celery seeds
  • 1/4 teaspoon sea salt, plus more, to taste
  • freshly ground black pepper, to taste
  • 6 cups green cabbage, shredded
  • 2 cups red cabbage, shredded
  • 2 medium carrots, sliced into thin peels
  • 3 scallions, chopped

Directions

Step 1 -In a medium bowl, whisk the mayonnaise, the apple cider vinegar, the Dijon mustard, the maple syrup, the celery seeds, 1/4 teaspoon of the salt, and the pepper together.

Step 2 -In a large bowl, toss the green cabbage, the red cabbage, the carrots, and the scallions together.

Step 3 -Pour the dressing over the cabbage mixture and toss to coat.

Step 4 -Taste the coleslaw and season with the extra salt and more of the pepper, as needed. Stir to combine.

Step 5 -Serve.
