Ingredients
- 1 (3-pound) baby watermelon
- 1/2 cup fresh mint leaves
- 1/4 cup red onion, thinly sliced
- 1 (12-ounce) package cherry or grape tomatoes, halved
- 2 tablespoons olive oil
- 2 tablespoons fresh lime juice
- 1 teaspoon honey
- kosher salt, to taste
- black pepper, to taste
- feta, optional, to taste, crumbled, for topping
Directions
Step 1 -Remove the rind from the watermelon.
Step 2 -Cut the watermelon flesh into 1 1/2-inch-thick triangles.
Step 3 -Arrange the watermelon triangles on a platter.
Step 4 -Top the watermelon triangles with the mint leaves, the red onions, and the tomatoes.
Step 5 -In a small bowl, add the olive oil, the lime juice, the honey, the salt, and the black pepper and whisk to combine.
Step 6 -Drizzle the dressing mixture over the salad mixture.
Step 7 -Serve topped with the crumbled feta.
