Southern Pecan Pie Muffins are a speedy and easy way to satisfy your pecan pie craving!
Ingredients
- 1/2 cup all-purpose flour
- 1 cup light brown sugar, packed
- 1 cup pecans, chopped
- 2 large eggs
- 11 tablespoons butter, melted
Directions
Step 1 -Preheat the oven to 350 degrees F.
Step 2 -Add cupcake paper liners to 7 cups of a 9-cup muffin tin.
Step 3 -Spray the muffin liners with nonstick cooking spray.
Step 4 -In a bowl, add the flour, the brown sugar, and the pecans and mix well to combine.
Step 5 -In a separate bowl, add the eggs and beat until they are foamy.
Step 6 -Add the melted butter to the beaten eggs and stir well to combine.
Step 7 -Add the egg mixture to the flour mixture and stir until just moistened into a batter.
Step 8 -Spoon the batter into the muffin cups, filling each cup almost to the top. There is no leavening agent so they will not rise.
Step 9 -Bake until the muffins are cooked through and a toothpick inserted into the center comes out clean, about 20-25 minutes.
Step 10 -Serve.
