  • 1 large sweet potato or yam, sliced
  • 4 tablespoons olive oil
  • 1/2 teaspoon salt
  • 1/2 teaspoon pepper
  • 1 teaspoon dried thyme

Directions

Step 1 -Preheat the oven to 400 degrees F.

Step 2 -Line a baking sheet with parchment paper.

Step 3 -Cut the sweet potato into 1/8-1/4-inch slices.

Step 4 -In a medium bowl, toss the sweet potato slices with the olive oil until fully coated.

Step 5 -Add the salt, the pepper, and the thyme and toss to coat.

Step 6 -Arrange the slices on a baking sheet without overlapping the potatoes.

Step 7 -Bake, flipping halfway, until golden-brown, about 25-35 minutes.

Step 8 -Let the slices cool to room temperature.

Step 9 -Serve.
