Ingredients

  • For the coconut curry lime dressing:
  • 1 1/2 cups canned coconut milk
  • 1 tablespoon red curry paste
  • 1/4 cup cilantro, packed
  • 8-10 fresh mint leaves
  • 1/4 teaspoon salt
  • 1/2 cup macadamia nuts
  • 2 tablespoons fresh lime juice
  • 3 green onions, roughly chopped
  • For the salad:
  • 4 cups kale leaves, washed and roughly chopped
  • 1 large mango, sliced
  • 1 cup red cabbage, shredded
  • 1 cup fresh salad sprouts, optional
  • 1/4 cup fresh mint leaves, roughly chopped
  • 1/4 cup fresh cilantro, roughly chopped
  • 1 medium red bell pepper, julienned
  • 1 large carrot, peeled into long ribbons
  • 1/4 cup macadamia nuts, divided
  • 1 tablespoon black sesame seeds, optional

Directions

Step 1 -In a blender or a food processor, add the coconut milk, the red curry paste, 1/4 cup of the cilantro, 8-10 of the mint leaves, the salt, 1/2 cup of the macadamia nuts, the lime juice, and the green onions and blend until smooth.

Step 2 -In a large bowl, add the kale, the mangoes, the red cabbage, the salad sprouts, the remaining mint leaves, the remaining cilantro, the bell peppers, the carrots, the remaining macadamia nuts, and the black sesame seeds and toss lightly to combine.

Step 3 -Add the dressing mixture to the salad mixture and toss to coat.

Step 4 -Serve.
