Ingredients
- 12 ounces fettuccine
- 1 pound shrimp, peeled and deveined
- salt, to taste
- pepper, to taste
- paprika, to taste
- 1 tablespoon oil
- 2 tablespoons butter
- 1 small onion, finely chopped
- 1 clove garlic
- 1/3 cup white wine
- 2 cups heavy cream
- 1/3 cup parmesan cheese, grated
Directions
Step 1 -In a large pot of salted, boiling water, cook the pasta to al dente, according to the instructions on the package.
Step 2 -Drain the noodles, but do not rinse them. Set the noodles aside.
Step 3 -Season the shrimp with the salt, the pepper, and the paprika.
Step 4 -Heat a large skillet over medium-high heat, then add the oil.
Step 5 -Once the oil has heated, place the shrimp into the pan in one layer. Cook for about 1-2 minutes on each side until they reach an internal temperature of 145 degrees F.
Step 6 -Place the shrimp in a separate bowl and set it aside.
Step 7 -Using the same pan, add the butter and the chopped onions. Sauté until the onions look golden-brown, about 6 minutes.
Step 8 -Add the garlic and cook, while stirring, until fragrant, about 1 minute.
Step 9 -Stir in the white wine and reduce until about 1/4 of the mixture remains, scraping the brown bits off of the bottom of the pan.
Step 10 -Stir in the heavy cream and allow it to simmer for 2 minutes.
Step 11 -Sprinkle the parmesan into the sauce mixture.
Step 12 -Stir the sauce mixture until it is creamy and smooth, then remove from the heat.
Step 13 -Add in the paprika, more of the salt, and more of the pepper, as needed.
Step 14 -Stir in the cooked shrimp and noodles.
Step 15 -Serve.
