Ingredients

  • For the fruit-infused ice cubes:
  • blueberries, to taste
  • fresh mint leaves, to taste, chopped
  • 1/2 lemon
  • water, to taste
  • For the cocktail:
  • 4 cups blueberries, divided
  • 2 teaspoons sugar
  • 2 teaspoons fresh ginger, grated
  • 1 lemon, cut into wedges, divided
  • 10 mint sprigs, divided
  • 8 ounces vodka
  • ice, to taste
  • 2 (12.7-fluid-ounce) bottles ginger beer, such as Bundaberg® Ginger Beer

Directions

Step 1 -In a large silicone ice tray, evenly arrange the extra blueberries and the extra chopped mint leaves in each of the compartments.

Step 2 -Use a sharp knife to cut 1 wedge from 1/2 of the lemon.

Step 3 -Squeeze the lemon wedge over the blueberries and the mint in the ice tray.

Step 4 -Evenly fill each of the compartments with the water.

Step 5 -Use a microplane to grate the zest from the remaining portion of the 1/2 lemon over the ice mixture.

Step 6 -Place the ice tray in the freezer and let the fruit-infused ice cubes chill until they are frozen all the way through, for at least 8 hours and up to overnight.

Step 7 -In a large bowl, add 2 cups of the remaining blueberries, the sugar, and the ginger and stir to coat the berries.

Step 8 -Squeeze 2 of the lemon wedges over the blueberry mixture and stir to combine.

Step 9 -In a pitcher, add the blueberry mixture and 6 of the remaining mint sprigs and muddle it thoroughly.

Step 10 -Add the vodka to the blueberry-mint mixture and stir it to combine.

Step 11 -Add the plain ice to the cocktail mixture and stir to combine.

Step 12 -Add the remaining lemon wedges, the remaining 2 cups of the blueberries, and the remaining 4 mint sprigs to the pitcher and stir to combine.

Step 13 -Add the ginger beer to the cocktail mixture and stir to combine.

Step 14 -Transfer the silicone ice tray from the freezer and pop out the fruit-infused ice cubes.

Step 15 -Add 1 of the fruit-infused ice cubes to each of the serving glasses and pour the cocktail over top.

Step 16 -Serve.
