  • 1 (16-ounce) box rotini pasta
  • 1/2 cup red wine vinegar
  • 1/2 teaspoon dried oregano
  • 1/2 teaspoon ground cumin
  • 1/2 teaspoon black pepper
  • 1/2 teaspoon salt
  • 1/2 cup neutral-flavored oil
  • 1 (16-ounce) can black beans, rinsed and drained
  • 1 cup frozen corn kernels
  • 2 tomatoes, chopped
  • 1 red bell pepper, diced
  • 1/2 cup black olives, optional
  • 1/4 cup cilantro, optional, chopped
  • 1/2 cup green onions, chopped
  • 1/4 red onion, chopped

Directions

Step 1 -In a large pot of salted, boiling water, cook the pasta according to package directions.

Step 2 -Rinse and drain the pasta, and set it aside.

Step 3 -In a large bowl, whisk together the vinegar, the oregano, the cumin, the pepper, and the salt, stirring to combine.

Step 4 -Whisk in the oil.
