Ingredients
- 1 (16-ounce) box rotini pasta
- 1/2 cup red wine vinegar
- 1/2 teaspoon dried oregano
- 1/2 teaspoon ground cumin
- 1/2 teaspoon black pepper
- 1/2 teaspoon salt
- 1/2 cup neutral-flavored oil
- 1 (16-ounce) can black beans, rinsed and drained
- 1 cup frozen corn kernels
- 2 tomatoes, chopped
- 1 red bell pepper, diced
- 1/2 cup black olives, optional
- 1/4 cup cilantro, optional, chopped
- 1/2 cup green onions, chopped
- 1/4 red onion, chopped
Directions
Step 1 -In a large pot of salted, boiling water, cook the pasta according to package directions.
Step 2 -Rinse and drain the pasta, and set it aside.
Step 3 -In a large bowl, whisk together the vinegar, the oregano, the cumin, the pepper, and the salt, stirring to combine.
Step 4 -Whisk in the oil.
Step 5 -Add the pasta to the dressing and toss to coat.
Step 6 -Add the beans, the corn, the tomatoes, the bell pepper, the olives, the cilantro, and the onions, stirring until thoroughly combined.
Step 7 -Chill the corn salad until ready to serve!
