Sub-tastic Casserole sure sounds enthusiastic! In fact, it's as enthusiastic as it is tasty! It's the beloved meatball submarine sandwich made into a casserole: it even uses buttery biscuits as the breading, so you don't miss out on any of that sandwich satisfaction! Of course, it can't be a Sub-tastic Casserole without the rich marinara sauce, the juicy meatballs, or the melty mozzarella cheese! Now, this is how you do lunch!

Ingredients

  • 1 (8-count, 16.3-ounce) can refrigerated biscuits
  • 1 1/2 cups marinara sauce
  • 1/2 teaspoon garlic powder
  • 1/2 teaspoon Italian seasoning
  • 1 (14-ounce) bag frozen Italian-style meatballs, thawed
  • 2 cups mozzarella cheese, shredded
  • fresh basil or parsley, optional, minced, for garnish

Directions

Step 1 -Preheat the oven to 375 degrees F.

Step 2 -Spray a large oven-safe skillet or a 3-quart baking dish with nonstick spray.

Step 3 -Lightly spray 1 piece of aluminum foil with nonstick spray.

Step 4 -Pull the 8 biscuits apart for each other and add them to the prepared skillet.

Step 5 -Top the biscuits with the marinara sauce, the garlic powder, and the Italian seasoning, stirring to mix the seasonings into the sauce and coat the biscuits evenly.

Step 6 -Nestle the meatballs into and on top of the biscuit pieces.

Step 7 -Cover the casserole with 1/2 of the shredded cheese.

Step 8 -Cover the skillet with the prepared foil, sprayed-side down.

Step 9 -Bake the casserole for 30 minutes.

Step 10 -Discard the foil and add the remaining cheese on top of the casserole.

Step 11 -Bake the casserole until it is bubbly and the cheese has melted, about 15 minutes.

Step 12 -Optionally, broil the top until golden-brown, about 1-2 minutes.

Step 13 -Serve the casserole hot and garnished with the basil.
