Ingredients

  • For the balsamic vinaigrette:
  • 1/4 cup extra-virgin olive oil
  • 1 1/2 tablespoons balsamic vinegar
  • 1 tablespoon Dijon mustard
  • 1/2 tablespoon maple syrup or honey, plus more, to taste
  • 1 clove garlic, pressed or minced
  • fine sea salt, to taste
  • freshly ground black pepper, to taste
  • For the salad:
  • 5 ounces arugula
  • 1/2 cup fresh basil, chopped
  • 1 pound strawberries, hulled and thinly sliced
  • 3/4 cup red onion, finely chopped
  • 1/2 cup radish, halved and thinly sliced
  • 1 medium jalapeño pepper, optional, very thinly sliced
  • 4 ounces goat cheese, crumbled, can substitute feta
  • 1/2 cup salted sunflower seeds, roasted

Directions

Step 1 -In a large liquid measuring cup or a medium bowl, add the olive oil, the balsamic vinegar, the Dijon mustard, 1/2 tablespoon of the maple syrup, the garlic, the salt, and the black pepper and whisk to combine.

Step 2 -Taste the vinaigrette mixture and season with more of the salt, more of the black pepper, and the extra maple syrup, as needed, and stir to combine.

Step 3 -On a large serving platter or in a large bowl, layer the arugula, the basil, the strawberries, the red onions, the radishes, the jalapeños, the goat cheese, and the sunflower seeds.

Step 4 -Serve the salad with the vinaigrette on the side, or optionally drizzle the vinaigrette over the salad and toss to combine.
