Ingredients

  • 4 (4-ounce) chicken breast halves, boneless and skinless
  • 1/4 teaspoon salt
  • 1/8 teaspoon pepper
  • 1 tablespoon canola oil
  • 1 medium sweet onion, cut into 1-inch pieces
  • 1 small sweet red pepper, cut into 1-inch pieces
  • 2/3 cup honey barbeque sauce

Directions

Step 1 -Sprinkle the chicken halves with the salt and the pepper.

Step 2 -In a large skillet, heat the oil over medium heat.

Step 3 -Add the chicken halves and cook until they reach 165 degrees F internally, about 4-6 minutes per side.

Step 4 -Transfer the chicken halves from the heat and keep them warm.

Step 5 -Add the onions and the red peppers to the same pan and cook, stirring, until tender, about 5-6 minutes.

Step 6 -Add the barbeque sauce and heat through.

Step 7 -Return the chicken halves to the pan, coating thoroughly with the sauce.

Step 8 -Plate the chicken, then top with the remaining sauce, the onions, and the peppers, and serve.
