Usually, pasta dishes are considered cold-weather food, but they're so tasty and filling that they need to be eaten year-round! Enter Springtime Penne. It starts with crunchy asparagus, whose peak season is–you guessed it–spring, savory onions, salty ham, and rich, heavy whipping cream. Tossed into a buttery bed of penne pasta and sprinkled with parmesan cheese, Springtime Penne will have you rethinking seasonal mealtime standards!

Ingredients

  • 1 pound fresh asparagus, cut into 1-inch pieces
  • 1 large onion, chopped
  • 1/4 cup butter
  • 1/2 pound ham, fully-cooked and cubed
  • 1/2 cup heavy whipping cream
  • 1/4 teaspoon pepper
  • 1/8 teaspoon salt
  • 3 cups penne pasta, cooked
  • parmesan cheese, optional, to taste, shredded

Directions

Step 1 -In a large skillet, sauté the asparagus and the onions in the butter until the asparagus is crisp and tender, about 5-8 minutes.

Step 2 -Add the ham, the heavy whipping cream, the pepper, and the salt to the asparagus-onion mixture. Bring to a boil.

Step 3 -Reduce to low heat and cook the asparagus mixture for 1 minute.

Step 4 -Add the cooked pasta to the asparagus mixture, tossing to coat.

Step 5 -Top the pasta with the parmesan cheese.

Step 6 -Serve.
