Easy and delicious are on the menu tonight! Spring Sheet-Pan Dinner will leave you plenty of time to get out and enjoy the lovely weather. This one-pan wonder simply combines flavorful chicken thighs, loveable gnocchi, fresh asparagus, cremini mushrooms, red onion wedges, and wilted spinach for a classy plate of goodness. When the weather changes for the better, waste no time and make Spring Sheet-Pan Dinner for the whole family. Springtime and good food are some of our favorites!
Ingredients
- 1 (16-ounce) package gnocchi
- 4 (3-ounce) chicken thighs, skinless and boneless, cut into 1-inch-thick pieces
- 2 cups asparagus, chopped
- 1 1/2 cups cremini mushrooms, sliced
- 1 cup red onion wedges
- 4 tablespoons olive oil, divided, plus more, to taste
- 1 teaspoon Italian seasoning
- 1 teaspoon kosher salt
- 1/2 teaspoon black pepper
- 6 cloves garlic
- 3 tablespoons white balsamic vinegar
- 2 cups fresh spinach
Directions
Step 1 -Preheat the oven to 425 degrees F.
Step 2 -Line a rimmed 18x26-inch baking sheet with parchment paper.
Step 3 -In a large bowl, add the gnocchi, the chicken pieces, the asparagus, the mushrooms, the onions, 3 tablespoons of the olive oil, the Italian seasoning, the salt, and the black pepper and toss to coat.
Step 4 -Add the chicken mixture in an even layer on the prepared baking sheet.
Step 5 -Add the garlic cloves to a small piece of foil and drizzle it with the extra olive oil.
Step 6 -Wrap the garlic cloves to enclose them completely and bake, about 5 minutes.
Step 7 -After 5 minutes, add the baking sheet to the oven and bake, stirring the chicken mixture once halfway through, until the chicken pieces reach an internal temperature of 165 degrees F, about 20 minutes.
Step 8 -Transfer the baking sheet and the garlic packet to a wire rack and use a spatula to clear space on the baking sheet.
Step 9 -Carefully unwrap the garlic cloves and place them on the cleared spot on the baking sheet.
Step 10 -Add the white balsamic vinegar and the remaining 1 tablespoon of the olive oil to the garlic and use a fork to mash them until they are combined.
Step 11 -Toss the garlic mixture with the chicken mixture.
Step 12 -Add the spinach to the chicken mixture and gently toss until the spinach has wilted, returning to the oven briefly, if needed.
Step 13 -Serve.
