As it starts to warm up outside, that doesn't mean you have to stop eating pasta! Spring Savory Pasta is a light and airy way to still get in those beloved carbs. Tossed with a zesty white wine sauce, some tender peas, and flaky salmon, you'll feeling so refreshed after a dish of this! Good flavors are definitely blooming with Spring Savory Pasta!

Ingredients

  • 2 (6-ounce) salmon fillets, boneless and skinless
  • 1 teaspoon whole coriander, crushed
  • kosher salt, to taste
  • freshly ground black pepper, to taste
  • 8 ounces cavatappi or other short pasta
  • 8 ounces fresh English peas
  • 4 tablespoons unsalted butter, cut into pieces, divided
  • 1/2 yellow onion, chopped
  • 1/2 cup dry white wine, such as chardonnay
  • 3 tablespoons fresh dill, torn

Directions

Step 1 -Preheat the oven to 350 degrees F.

Step 2 -Lightly grease a small baking sheet.

Step 3 -Place the salmon fillets on the prepared baking sheet and season evenly with the coriander, the salt, and the pepper.

Step 4 -Roast the seasoned salmon fillets until they reach an internal temperature of 145 degrees, about 13-15 minutes.

Step 5 -Transfer the cooked salmon fillets to a plate and let them cool completely.

Step 6 -Use a fork to flake the cooled salmon fillets into large pieces.

Step 7 -In a large pot of salted, boiling water, cook the cavatappi to al dente, according to the package directions. Add the peas to the pasta with 1 minute of cooking time left.

Step 8 -Reserve 1 cup of the pasta water and drain the rest.

Step 9 -In a large skillet over medium heat, melt 2 tablespoons of the butter.

Step 10 -Add the onions to the melted butter and season with the salt and the pepper. Cook, stirring occasionally, until the onions are translucent, about 6-8 minutes.

Step 11 -Add the wine to the onions and cook until it is syrupy, about 3-4 minutes.

Step 12 -Add the cooked cavatappi and 1/2 cup of the reserved pasta water to the sauce and bring it to a simmer.

Step 13 -Transfer the pot from the heat and stir the remaining butter into the cavatappi mixture. Add the remaining cooking water, as needed, to thin the sauce.

Step 14 -Gently fold the dill and the salmon into the pasta mixture.

Step 15 -Serve.
