This super easy snack uses your smoker or grill to meld together some creamy cheeses, juicy tomatoes, spicy jalapeños, and savory chorizo. It takes some time for the magic to happen, but you'll see after your first bite that it was worth the wait! There will be no more boring parties as long as this Smokin' Hot Queso is around!

Ingredients

  • 1 pound ground chorizo or ground spicy sausage
  • 1 (32-ounce) block Velveeta® cheese, cubed
  • 1 (8-ounce) block pepper jack cheese, cubed
  • 1 cup pickled jalapeños, chopped
  • 2 (10-ounce) cans diced tomatoes with green chilies
  • 1/2 cup white onion, chopped
  • 1 tablespoon garlic, minced
  • tortilla chips, to taste, for serving

Directions

Step 1 -Preheat the smoker or the grill to 250 degrees F. Use pecan chips, if using a smoker.

Step 2 -In a medium skillet over medium-high heat on the stovetop, add the chorizo and cook, while crumbling, until it is no longer pink. Drain the grease.

Step 3 -In a 9×13 aluminum pan, add the Velveeta cheese cubes, the pepper jack cheese cubes, the cooked chorizo, the jalapeños, the tomatoes with green chilies and their juices, the onions, and the garlic and stir to combine.

Step 4 -Transfer the pan into the smoker and cook, stirring occasionally, until the cheese is fully melted, about 1 hour 30 minutes-2 hours.

Step 5 -Carefully transfer the pan to a wire rack and stir the cheese dip.

Step 6 -Serve the cheese dip with the tortilla chips.
