Ingredients

  • For the cake:
  • 2 cups all-purpose flour
  • 2 teaspoons baking soda
  • 1 1/4 teaspoons ground cinnamon
  • 1/2 teaspoon salt
  • 1/4 teaspoon nutmeg, freshly grated
  • 1 (15-ounce) can pumpkin purée
  • 1 3/4 cups brown sugar
  • 1/2 cup plain Greek yogurt
  • 1/2 cup vegetable oil
  • 4 large eggs
  • 2 teaspoons vanilla extract
  • For the cinnamon cream cheese frosting:
  • 2 (8-ounce) packages cream, room temperature
  • 1 stick unsalted butter, room temperature
  • 2 1/2 cups powdered sugar
  • 1/2 teaspoon cinnamon, plus more, to taste, for garnish
  • 1 teaspoon vanilla extract

Directions

Step 1 -Preheat the oven to 350 degrees F.

Step 2 -Coat a 9x13-inch baking dish with nonstick spray.

Step 3 -In a mixing bowl, add the flour, the baking soda, 1 1/4 teaspoons of the cinnamon, the salt, and the nutmeg and whisk to combine.

Step 4 -In a large bowl, add the pumpkin, the brown sugar, the yogurt, and the oil and whisk to combine until smooth.

Step 5 -Add the eggs to the pumpkin mixture, 1 at time, and whisk until smooth after each addition.

Step 6 -Add 2 teaspoons of the vanilla to the pumpkin mixture and whisk to combine.

Step 7 -Add the flour mixture to the pumpkin mixture and stir until just combined with no large lumps remaining.

Step 8 -Pour the batter into the prepared baking dish and spread it out evenly.

Step 9 -Bake until a tester inserted into the center of the cake comes out clean, about 30-40 minutes.

Step 10 -Allow the cake to cool completely.

Step 11 -In a bowl, add the cream cheese and the butter and using an electric handheld mixer on medium speed, beat until combined and creamy.

Step 12 -Add the powdered sugar and 1/2 teaspoon of the remaining cinnamon to the cream cheese mixture and beat until combined.

Step 13 -Add the remaining vanilla to the cream cheese mixture and beat to combine.

Step 14 -Spread the frosting evenly over the cake.

Step 15 -Sprinkle with the extra cinnamon, slice, and serve.
