Ingredients

  • 10 strips bacon, diced
  • 1 large onion, chopped
  • 1 cup carrots, diced
  • 3 tablespoons all-purpose flour
  • 3 cups whole milk
  • 1 1/2 cups water
  • 2 1/2 cups potatoes, cubed
  • 1 (15.25-ounce) can whole kernel corn, drained
  • 2 teaspoons chicken bouillon granules
  • black pepper, to taste
  • 3 cups cheddar cheese, shredded
  • 2 cups ham, cubed
  • fresh chives, optional, to taste, chopped or diced, for garnish

Directions

Step 1 -In a Dutch oven over medium heat, add the diced bacon and cook, while stirring, until crisp, about 7-10 minutes.

Step 2 -Using a slotted spoon, transfer the bacon to paper towels to drain and reserve the drippings in the Dutch oven.

Step 3 -Over medium heat, add the onions and the carrots to the reserved drippings and cook, while stirring, until tender, about 5 minutes.

Step 4 -Add the flour to the onion mixture and cook, while stirring, until combined, about 1-2 minutes.

Step 5 -Gradually add the milk and the water to the onion mixture and stir to combine.

Step 6 -Bring the milk mixture to a boil, while stirring constantly.

Step 7 -Cook the milk mixture until thickened, about 2 minutes.

Step 8 -Reduce the stovetop heat to medium-low or low heat, enough to maintain a simmer.

Step 9 -Add the potatoes, the corn, the chicken bouillon granules, and the black pepper to the milk mixture and stir to combine.

Step 10 -Simmer the chowder mixture, uncovered, until the potatoes are tender, about 20 minutes.

Step 11 -Add the cheddar cheese and the ham to the chowder mixture and cook, while stirring, until the cheese has melted.

Step 12 -Add the resserved bacon to the chowder mixture and stir to combine.

Step 13 -Cook the chowder mixture until the bacon is heated through, about 1-3 minutes.

Step 14 -Serve garnished with the chives.
