Well, it might be tough because the summer is so hot, so perhaps you can just taste that open-air freedom with the Prairie Days Salad! Fresh mixed greens, juicy blackberries, tangy blue cheese, and crisp, succulent bacon pieces are tossed together with a sweet and tangy homemade honey balsamic vinaigrette. You may not be able to enjoy the summer weather on the plains, but Prairie Days Salad are still an adventure for the senses!

Ingredients

  • For the vinaigrette:
  • 1/3 cup olive oil
  • 1/3 cup balsamic vinaigrette
  • 2 tablespoons honey
  • 1/2 teaspoon cinnamon
  • 1/2 teaspoon dried basil
  • For the salad:
  • 4 cups mixed greens
  • 1/2 cup blue cheese, crumbled
  • 1/2 cup fresh blackberries
  • 4 pieces bacon, optionally turkey bacon, cooked and crumbled
  • 1 green onion, sliced

Directions

Step 1 -In a small bowl, add the olive oil, the balsamic vinaigrette, the honey, the cinnamon, and the dried basil and whisk to combine.

Step 2 -In a large serving bowl, add the mixed greens, the blue cheese, the blackberries, the bacon, and the green onions and toss lightly to combine.

Step 3 -Add as much of the vinaigrette as desired to the salad mixture and toss to combine. There may be leftover dressing.

Step 4 -Serve.
