Why be fancy when you can have Simple & Delicious Pasta? It doesn't take much to bring this dainty yet filling dish together. It's cheesy, lightly infused with fresh zucchini, and is just a pure delight to see on your plate. Sure, it's nice to enjoy high-end dishes sometimes, but nothing will ever take the place of this Simple & Delicious Pasta!
Ingredients
- 3 tablespoons olive oil
- 5 cloves garlic, finely chopped
- 1 1/2 cups zucchini, grated
- 1/2 cup chicken broth
- 1 lemon, zested and juiced
- 1 bunch fresh parsley, chopped into small pieces
- salt, to taste
- pepper, to taste
- 10 ounces small pasta shells, cooked and warm
- 1/2 cup parmesan, grated, plus more, to taste, for serving
Directions
Step 1 -In a large pan over medium heat, add the olive oil and the garlic and cook until it is fragrant, about 1 minute.
Step 2 -Add the grated zucchini to the garlic and stir to coat.
Step 3 -Add the chicken broth and the lemon zest to the zucchini mixture and bring it to a light simmer. Cook until the zucchini has softened, about 5 minutes.
Step 4 -Add the lemon juice, the parsley, the salt, and the pepper to the zucchini mixture and toss to combine.
Step 5 -Add the cooked shells to the zucchini mixture and evenly sprinkle with 1/2 cup of the parmesan. Stir to combine.
Step 6 -Serve the pasta sprinkled with the extra parmesan.
