Ingredients

  • 1 lemon, zested and juiced
  • 3 cloves garlic, chopped
  • 1/4 cup olive oil, plus more, to taste, for greasing the grill grates
  • 1 teaspoon kosher salt
  • 1/4 teaspoon ground black pepper
  • 1/4 teaspoon crushed red pepper flakes
  • 2 1/2 pounds extra-large shrimp, peeled and deveined
  • fresh parsley, to taste, chopped, for garnish
  • lemon wedges, to taste, for garnish

Directions

Step 1 -In a large bowl, add the lemon zest, the lemon juice, the garlic, 1/4 cup of the oil, the salt, the black pepper, and the crushed pepper flakes and stir to combine.

Step 2 -Add the shrimp to the marinade and toss well to coat.

Step 3 -Cover the bowl and place it in the refrigerator. Let the shrimp marinate, about 15 minutes.

Step 4 -Preheat the grill to medium-high heat and use the extra oil to grease the grill grates.

Step 5 -Assemble 12 metal or wooden-soaked skewers with the marinated shrimp, about 4-5 per skewer. Discard the remaining marinade.

Step 6 -Place the skewers on the grill over direct heat and cook the shrimp until they reach an internal temperature of 145 degrees F, are bright pink all over, and are opaque, about 2-3 minutes.

Step 7 -Transfer the skewers from the heat.

Step 8 -Serve the shrimp skewers garnished with the parsley and the lemon wedges.
