Ingredients

  • 3 tablespoons butter
  • 3 tablespoons all-purpose flour
  • 2 cups chicken broth
  • 1 cup sour cream
  • 1 (4-ounce) can diced green chiles
  • 1 1/2 teaspoons cumin
  • 1 teaspoon garlic powder
  • 1 teaspoon onion powder
  • salt, to taste
  • pepper, to taste
  • 3 cups rotisserie chicken, chopped
  • 1 (32-ounce) bag frozen tater tots
  • 2 cups pepper jack cheese, shredded, divided

Directions

Step 1 -Preheat the oven to 350 degrees F.

Step 2 -Lightly coat a 9x13-inch baking dish with cooking spray.

Step 3 -In a small saucepan over medium heat, melt the butter.

Step 4 -Whisk the flour into the melted butter and cook, about 1 minute.

Step 5 -Add the chicken broth to the butter mixture and whisk until it is smooth.

Step 6 -Cook the butter mixture until it thickens into a sauce.

Step 7 -Transfer the saucepan from the heat and stir the sour cream, the diced green chiles plus their juices, the cumin, the garlic powder, the onion powder, the salt, and the pepper into the sauce.

Step 8 -In a large bowl, add the sauce, the chicken pieces, the tater tots, and 1 1/2 cups of the cheese and stir until it is well-combined.

Step 9 -Pour the chicken mixture into the prepared baking dish and evenly sprinkle with the remaining cheese.

Step 10 -Bake the chicken mixture until the tater tots are cooked, the mixture is heated through, and the cheese is melted, about 45-50 minutes.
