Ingredients

  • 1/3 cup cane sugar
  • 1/3 cup distilled or spring water
  • 1 cup fresh raspberries, plus more, to taste, for serving
  • 1/2 cup distilled white vinegar
  • 2 tablespoons rose water
  • freeze dried raspberries, to taste, crushed
  • lemon juice, to taste
  • ice, to taste, for serving
  • 4 cups sparkling water

Directions

Step 1 -In a small saucepan over high heat, add the sugar and the distilled water and bring it to a simmer. Cook until it is syrupy, about 4 minutes.

Step 2 -In a medium bowl, add 1 cup of the fresh raspberries and use a fork to mash them.

Step 3 -Add the mashed raspberries to the simple syrup and reduce the heat to medium-low. Cook, stirring occasionally, until it starts to thicken, about 5 minutes.

Step 4 -Add the white vinegar and the rose water to the raspberry mixture and cook until it is fragrant, about 3 minutes.

Step 5 -Strain the raspberry mixture into a heat-safe glass jar and place it in the refrigerator to chill.

Step 6 -Sprinkle the crushed dried raspberries on a small plate, then pour the lemon juice onto a second small plate. Dip the rims of four serving glasses into the lemon juice and then into the crushed dried raspberries to coat.

Step 7 -Evenly add the ice and the extra fresh raspberries to the prepared serving glasses, then top each with 1 cup of the sparkling water.

Step 8 -Evenly pour the cooled raspberry mixture into the four serving glass.

Step 9 -Serve.
