It's sweet, it's unique, it's just plain scrumptious! You'll never taste anything quite as lovely as the Raspberry Delight Tiramisu. The layers of creamy goodness stacked tall with coffee-soaked ladyfingers and fresh raspberries are really the treat you didn't know you were missing! Super easy to whip up and lots of fun to eat, everyone is sure to love the delicious and beautiful Raspberry Delight Tiramisu!
Ingredients
- For the tiramisu:
- 3 cups heavy cream
- 3/4 cup confectioners' sugar
- 2 teaspoons vanilla extract
- 12 ounces macarpone
- 3 cups coffee, strongly brewed
- 1/4 cup Grand Marnier® liqueur
- 36 ladyfingers
- 1/2 cup raspberry jam
- 12 ounces fresh raspberries
- Optional, for garnish:
- chocolate shavings, to taste
- ladyfingers, to taste
- fresh raspberries, to taste
Directions
Step 1 -In a large bowl, add the heavy cream, the confectioners' sugar, and the vanilla extract and beat with an electric hand mixer until medium peaks form.
Step 2 -In a medium bowl, add the mascarpone and about 1/4 cup of the whipped cream and stir gently until it is combined.
Step 3 -Gently fold the remaining whipped cream into the mascarpone mixture.
Step 4 -In a large glass measuring cup, add the coffee and the Grand Marnier and mix to combine.
Step 5 -Spread 1/4 of the whipped cream mixture in the bottom of a large trifle dish.
Step 6 -Working 1 at a time, quickly dip 36 of the ladyfingers into the coffee mixture, then place them in a clean bowl.
Step 7 -Evenly arrange 1/3 of the dipped ladyfingers in a circle on top of the whipped cream layer until it is completely covered, breaking them, as needed, to fit.
Step 8 -Evenly spread about 1/3 of the remaining whipped cream mixture over the dipped ladyfingers, then evenly and gently spread 1/2 of the jam over the top.
Step 9 -Evenly sprinkle 6 ounces of the raspberries over the jam layer.
Step 10 -Evenly arrange 1/2 of the remaining dipped ladyfingers in a circle on top of the raspberry layer until it is completely covered, breaking them, as needed, to fit.
Step 11 -Evenly spread 1/2 of the remaining whipped cream over the ladyfinger layer, then evenly top with the remaining jam and 6 ounces of the remaining raspberries.
Step 12 -Evenly arrange the remaining dipped ladyfingers in a circle on top of the raspberry layer until it is completely covered, breaking them, as needed, to fit.
Step 13 -Evenly spread the remaining whipped cream mixture over the ladyfinger layer. Note: If you prefer to use individual dishes, follow the layering steps, just in smaller portions.
Step 14 -Cover the trifle bowl with plastic wrap, then transfer the tiramisu to the refrigerator. Chill until it is thoroughly cool, for at least 4 hours and up to overnight.
Step 15 -Serve the tiramisu garnished with the chocolate shavings, the extra ladyfingers, and the extra raspberries.
