Great chowder in an hour isn't impossible; in fact, it's deliciously achievable with this Quick & Easy Cheesy Ham Chowder! The broth is creamy and savory, and filled with succulent ham and crisp bits of bacon for an extra pork kick! Loaded with cheese, potatoes, and sweet summer corn, the Quick & Easy Cheesy Ham Chowder is a warm weather favorite that tastes bountiful and looks beautiful!
Ingredients
- 10 bacon strips, diced
- 1 large onion, chopped
- 1 cup carrots, diced
- 3 tablespoons all-purpose flour
- 3 cups whole milk
- 1 1/2 cups water
- 2 1/2 cups potatoes, cubed
- 1 (15.25 ounce) can whole kernel corn, drained
- 2 teaspoons chicken bouillon granules
- pepper, to taste
- 3 cups cheddar cheese, shredded
- 2 cups ham, cubed and fully cooked
Directions
Step 1 -In a Dutch oven, cook the bacon over medium heat until crisp, about 5 minutes.
Step 2 -Using a slotted spoon, transfer the bacon to paper towels to drain.
Step 3 -In the bacon drippings in the Dutch oven over medium heat, sauté the onion and the carrots until tender, about 5 minutes.
Step 4 -Stir in the flour until blended.
Step 5 -Gradually add the milk and the water.
Step 6 -Bring the mixture to a boil and cook, stirring, until thickened, about 2 minutes.
Step 7 -Add the potatoes, the corn, the bouillon, and the pepper.
Step 8 -Reduce the heat to low and simmer, uncovered, until the potatoes are tender, about 20 minutes.
Step 9 -Add the cheese and the ham and heat until the cheese is melted.
Step 10 -Stir in the cooked bacon.
Step 11 -Serve.
