Ingredients

  • 1/2 tablespoon olive oil
  • 4 ounces ground pork
  • 1/8 teaspoon kosher salt
  • 1/4 cup mushrooms, sliced
  • 1/4 cup onions, chopped
  • 1 small carrot, chopped
  • 1 clove garlic, minced
  • 1/8 teaspoon ground ginger
  • 1 cup spinach
  • 1 tablespoon low-sodium soy sauce
  • 1/2 teaspoon apple cider vinegar
  • 1/8 teaspoon coarsely ground black pepper
  • 1 cup rice, cooked and warm, for serving

Directions

Step 1 -In a 10-inch skillet over medium-high heat, add the oil.

Step 2 -Add the ground pork and the salt to the hot oil and cook, while stirring frequently, until the meat is no longer pink, about 4-6 minutes.

Step 3 -Transfer the pork from the pan and set it aside.

Step 4 -In the same skillet, add the mushrooms, the onions, and the carrots and cook, while stirring occasionally, for 2 minutes.

Step 5 -Add the garlic and the ginger and cook, while stirring, until fragrant, about 30 seconds.

Step 6 -Add the spinach, the soy sauce, the vinegar, and the black pepper and stir to combine.

Step 7 -Cook the veggie mixture, while stirring constantly, until the spinach wilts.

Step 8 -Add the cooked pork and stir to combine.

Step 9 -Serve the stir-fry over the rice.
