Ingredients

  • 2 tablespoons butter, divided
  • 1/2 pound smoked Polish sausage or smoked kielbasa, cut into 1/2-inch slices
  • 1/2 large head cabbage, coarsely chopped
  • 1 medium onion, chopped
  • 2 (8-ounce) cans tomato sauce
  • 1/4 cup sugar
  • 1 tablespoon paprika
  • 2 large potatoes, peeled and cubed

Directions

Step 1 -In a large enameled cast-iron or other oven-proof skillet, melt 1 tablespoon of the butter.

Step 2 -Add the sausage and cook until browned, about 5 minutes.

Step 3 -Transfer the sausage to a plate.

Step 4 -Melt the remaining butter in the same skillet.

Step 5 -Add the cabbage and the onion and sauté until tender, about 5-7 minutes.

Step 6 -In a small bowl, combine the tomato sauce, the sugar, and the paprika.

Step 7 -Pour the sauce mixture over the cabbage mixture.

Step 8 -Bring the mixture to a boil, then reduce the heat to low.

Step 9 -Cover and simmer the mixture for 20 minutes.

Step 10 -Add the potatoes and the sausage, then cover again to simmer until the potatoes are tender, about 30 minutes.

Step 11 -Serve.
