Ingredients

  • 4 pork chops, boneless and at least 1-inch thick
  • 1 tablespoon olive oil
  • 1 teaspoon yellow mustard
  • 1 tablespoon brown sugar
  • 1 teaspoon ground paprika
  • 1 teaspoon garlic powder
  • 1 teaspoon onion powder
  • 1/2 teaspoon salt
  • 1/4 teaspoon ground black pepper

Directions

Step 1 -Preheat the oven to 400 degrees F.

Step 2 -Line a rimmed baking sheet with parchment paper.

Step 3 -Place the pork chops between two pieces of plastic wrap.

Step 4 -Very gently pound the covered pork chops using a rolling pin or the flat side of a meat mallet. The purpose is not to flatten them much but rather to tenderize them, so 4-5 gentle smacks will do.

Step 5 -Rub the tenderized pork chops with the oil and the mustard.

Step 6 -In a small bowl, combine the brown sugar, paprika, garlic powder, onion powder, salt, and pepper.

Step 7 -Rub the seasoning mixture all over the pork chops.

Step 8 -Place the chops on the prepared baking sheet.

Step 9 -Bake the coated pork chops until an instant thermometer inserted into the center reads 145 degrees F, about 12-15 minutes, or depending on the thickness, about 6 minutes per 1/2 inch of thickness.

Step 10 -Turn the oven to broil.

Step 11 -Broil the baked pork chops until browned, about 1-2 minutes.

Step 12 -Transfer the baked pork chops out of the oven and allow them to rest for 5 minutes.

Step 13 -Serve.
